The first thing you notice, even before you walk in off the street, is the smell: the aroma of garlic on the griddle, peppers and onions, balsamic vinager, fresh cut potatoes frying in vegetable oil, curries, sauces, real Amish-style butter melting over . This is world-home-cooking at its finest. If you can overcome your hunger long enough to look around, you may notice the craftsmanship that has gone into the Kitchen's furnishings: Eveything is wooden, hand carved with tender care by local artisans or by Rosetta's father (it's a family business!).

You pass a table full of environmentalists planning a daring rescue of twenty-two acres of untouched forest in the mountains, their plates full of locally grown kale, beans, organic rice, and homemade salsa. At the next table sits a family of four, devouring a plate piled with nachos. On the enclosed balcony, a group of street musicians tune their instruments over pints, college students study for their midterms, and band of belly dancers sit in full regalia. This, you think, is the regular crowd.

When it comes time to finally order, you feel a bit overwhelmed. There are so many things to choose from. Instead of the usual vegetarian fare you expect to find, Rosetta's offers a huge variety of ethnic, down home cooking, and creative original meals. And what's more, the Kitchen cooks all of their food from scratch. Whole food made from real, honest-to-Shiva, plants. You kind of get the sense that the vegetables were picked merely hours before. And sometimes...the are.

And in case you were wondering what happens to all that "Restaurant Waste"...Rosetta's Kitchen composts 200 gallons of food per week! That's 10,400 gallons of food a year that is kept from landfills and turned back into soil! We Recycle 180 lbs of aluminum, glass and paper per week! That's 9,360 lbs a year! We buy $500 of local produce each week! That money goes to support local farmers working in WNC!

Your food comes and you sit back and take in its wholesome aroma for just a moment. It is satisfying to know that what you are about to eat is good for you, your Earth and your Community. Bon Apetite!
